Cranberry White Chocolate Scones
3 cups Flour
5 tbsp Sugar
1 tbsp + 1 tsp Baking Powder
1/2 tsp Salt
2 Sticks of Butter
1 cup Dried Cranberries
1 cup White Chocolate Chips
1 1/4 cup Heavy Cream
Mix dry ingredients in a mixing bowl. Either cut or grate butter into the flour. You can also use a food processor to cut the butter into flour mix. In the mixing bowl - go ahead and mix in the cranberries and white chocolate chips with your flour/butter mix. Then add your heavy cream. Mix with a dough whisk until combined and then go in with your hands to make sure the cream and flour are all incorporated. Split the dough into 2 even pieces. Roll one piece into a ball and press into a 1/2-3/4" disc. Then with a knife, cut into 6 pieces. Place on baking sheet and do the same to the other half of dough. At this point, brush a little heavy cream on each one and sprinkle raw sugar on them, or bake off the finish glazing. Bake at 400* for 15-16 minutes. Let cool. Make a small amount of glaze with powdered sugar and either milk, lemon, or orange juice. Drizzle over. Let set up and enjoy!
