Kashmiri Palak Nadru Ki Sabji is a delicious and nutritious dish made from spinach (palak) and lotus stems (nadru). Here’s a simple recipe to prepare this traditional Kashmiri dish:
Ingredients:
2 cups fresh spinach leaves (palak), washed and chopped
1 cup lotus stem (nadru), sliced (you can use canned or fresh)
2 tablespoons mustard oil (or any cooking oil of your choice)
1 teaspoon cumin seeds (jeera)
1 teaspoon ginger, finely grated
1-2 green chillies, slit (adjust to taste)
½ teaspoon turmeric powder (haldi)
1 teaspoon red chili powder (adjust to taste)
Salt to taste
1 tablespoon yogurt (optional, for a creamy texture)
Fresh coriander leaves, chopped (for garnish)
Instructions:
1. Preparation: If using fresh lotus stems, clean and slice them into round pieces. Soak them in water with a little lemon juice to prevent browning.
2. Cooking the Lotus Stem:
In a pan, heat 1 tablespoon of mustard oil over medium heat.
Add the sliced lotus stems and sauté for about 5-7 minutes until they are slightly tender.
Remove the lotus stems from the pan and set aside.
3. Cooking the Spinach:
In the same pan, add the remaining tablespoon of mustard oil.
Once hot, add cumin seeds and allow them to splutter.
Add grated ginger and slit green chilies, and sauté for a few seconds until fragrant.
Add the chopped spinach and stir well. Cook for about 5-6 minutes until the spinach is wilted and cooked down.
4. Combine Ingredients:
Add sautéed lotus stems to the cooked spinach.
Sprinkle turmeric powder, red chili powder, and salt. Mix everything well.
You can add yogurt at this stage for a creamier texture, if desired. Cook for another 3-4 minutes to allow the flavors to blend.
5. Final Touches:
Taste and adjust the seasoning if needed.
Garnish with freshly chopped coriander leaves.
6. Serve:
Kashmiri Palak Nadru Ki Sabji can be served hot with steamed rice, roti, or naan.
