Here's a recipe for Mutton Rogan Josh:
Ingredients:
500g mutton, cut into pieces
2 large onions, finely sliced
2 tomatoes, pureed
1 cup plain yogurt, whisked
2 tbsp ginger-garlic paste
2-3 green chilies, slit (adjust to taste)
1/2 cup mustard oil (or any cooking oil)
Whole Spices: 2-3 bay leaves, 4-5 green cardamoms, 2 black cardamoms, 4-5 cloves, 1-inch cinnamon stick
Powdered Spices: 1 tbsp Kashmiri red chili powder, 1 tsp coriander powder, 1/2 tsp cumin powder, 1/4 tsp turmeric powder, 1/2 tsp garam masala, salt to taste
Fresh coriander leaves for garnish
Instructions:
1. Heat mustard oil in a heavy-bottomed pan or pressure cooker until it smokes, then cool slightly.
2. Add whole spices and sauté for a minute until fragrant.
3. Add sliced onions and fry until golden brown.
4. Add ginger-garlic paste and green chilies, sauté for 2 minutes.
5. Add mutton and cook on high heat until it changes color.
6. Lower the heat, add all powdered spices (except garam masala), and sauté for 5-7 minutes, stirring constantly.
7. Add tomato puree and cook until oil separates.
8. Gradually add whisked yogurt, stirring continuously to prevent curdling. Cook for 5-7 minutes.
9. Add 1-2 cups of hot water (or enough to cover the mutton), salt, and bring to a boil.
10. If using a pressure cooker, close the lid and cook for 5-6 whistles or until mutton is tender. If using a pan, cover and simmer on low heat until mutton is tender, adding water as needed.
11. Once mutton is cooked, add garam masala and simmer for another 5 minutes.
12. Garnish with fresh coriander leaves and serve hot with rice or naan.#trending #viral #food #kashmirire
