This zucchini egg roll recipe is the best and easiest of all. In a few minutes you make the best roll with beef, eggs and zucchini that you and your whole family will love and enjoy.
Ingredients:
2 tbsp olive oil
1 large onions
2 lbs. ground beef
1 tsp sea salt
1 tsp taco seasoning
black pepper
8 eggs
1 large zucchini
sea salt and pepper
1 cup mozzarella cheese
1/4 cup cilantro
1/2 bell pepper

Instructions:
1. Preheat the oven to 360°F.. Add the eggs into a mixing bowl and beat until creamy.
2. In a pot or skillet combine olive oil, onions and beef
3. Add seasoning and keep stirring until the color changes
4. Cook on low flamer for about 10 minutes or until the liquid from the meat and onions is dried out.
5. Cut zucchini into slices, about 1/2 an inch
6. Spread the zucchini slices on a baking sheet double lined with parchment paper.
7. Pour eggs over the zucchini slices evenly
8. Transfer the baking sheet to the preheated oven and cook for 15 minutes or until the eggs are done cooking
9. Add shredded mozzarella, ground beef, cilantro, onions and bell pepper
10. Use your hands or the top parchment paper to gently roll everything up
11. Transfer the baking sheet to the preheated oven and cook for 20-25 minutes at 360°F or until the color gets a little darker and the cheese is melted. Enjoy!
