Learn the secrets of the legendary Shinwari Mutton Karahi. Originating from the Pashtun tribes of Peshawar and the Shinwari region, this karahi is famous for its simplicity, bold meat flavor, and smoky aroma. No onions, just a handful of ingredients cooked to perfection.
In this video, I'll show you the authentic technique to get that restaurant-style tender mutton and the signature gravy right in your American kitchen.
RECIPE & KEY STEPS BELOW
Ingredients:
Mutton/Goat Meat (with bone): 1 kg (2.2 lbs.)
Chopped Tomatoes 500 gm
Cooking Oil 1/2 cup (100 ml)
Ginger paste 1 tbsp, Garlic Paste 1 tbsp
Salt 1 tsp, adjust to taste
Water: as needed (around 750 ml)
Black Pepper: 1 tsp, freshly crushed
Green Chilies: 4-6
Fresh Cilantro 1 cup, chopped
Instructions:
1. In a heavy-bottomed karahi or wok, add the mutton 1 kg, ginger garlic paste 1 tbsp each, salt 1 tsp, cooking oil 100 ml and water 750 ml. Cook this on medium heat till mutton is 90-95% tender. It will take around 45 minutes or more depending upon hardness of mutton.
2. After 45 minutes, check the tenderness of meat. Add chopped tomatoes 500 gm. Keep on cooking on medium heat till mutton is completely tender. Once mutton is tender, Bhuno (dry Fry) nicely for few minutes.
3. Add Chopped green chilies, cilantro and coarse ground black pepper. Mix well. Simmer for a minute.
4.Serve with naan or roti.
