CHICKEN MARINATIONS
Chicken chukka marination:
Chicken - 250 gm
Tomato - 1 medium
Red chilli pwd - 2 to 3 tbsp
Coriander pwd - 2 tbsp
Fennel seed - 1 tbsp
Yoghurt - 2 tbsp
Fried onion - 1/2 cup to 3/4 cup (as per taste)
Salt as needed
Green chicken marination:
Chicken 250 gm
Green chilli - 3 or 4
Mint leaves - 1/4 cup
Coriander leaves - 1/2 cup
Ginger - 2 tsp
Garlic - 3 tsp
Yoghurt - 2 tbsp
Coriander pwd - 2 tbsp
Garam masala - 1 tsp
Salt as needed
Schezwan chicken marination:
Chicken 250 gm
Red chilli pwd - 1 tbsp
Coriander pwd - 1 tbsp
Schezwan paste - 1/2 cup
Ginger - 1 tbsp
Salt as needed
ALOO PARATHA
Potato (medium sized ) - 4
Coriander seeds - 2 tsp
Cumin seed - 1 tsp
Fennel seed - 1 tsp
Red chilli flakes - 2 tsp
Garam masala - 1 tsp
Coriander leaves - handful
Hing - 1/2 tsp
Salt as needed
Chapati dough:
Atta - 3 cups
Oil - 1 to 2 tbsp
Salt as needed
Water - 1 to 1 1/2 cup (as per atta brand)
ENERGY DRINK (Bulk quantity)
DATES - 2 cups (can add more as per sweetness needed)
Makhana - 1 cup
Almonds - 1/2 cup
Walnut - 1/2 cup
Pumpkin seed - 1/4 cup
Flax seed - 1/4 cup
Cardomom pods - 4 to 5
Milk - 2 cups
Blend to a very fine paste so that it is easy to drink.
🥤 Add 1 tbsp of this mixture to 1 glass of milk and mix to make the drink.
BEEF CUTLET: (makes 15 to 16 cutlets)
Potato - 5 medium ( boiled and mashed)
Beef - 150 to 200 gm
Onion - 4 medium chopped
Green chilli - 5 to 6 ( according to spice tolerance)
Garlic - 2 tbsp
Turmeric - 1/2 tsp
Garam masala - 1/2 tsp
Coriander- handful
Bread crumbs - 1/2 cup
Salt as needed
Cournflour slurry - 1 tbsp to 1/2 cup water.
HOMEMADE MAYO:
Rice bran oil ( or any neutral oil) - 3/4 cup
Egg - 1 ( make sure its room temperature)
Garlic - 1 clove
Vinegar - 1 tsp
Salt as needed
Refrigerate and use before 2 to 3 weeks.
