Welcome back to DDs African Kitchen!
Apapransa (also known as Akplijii) is a traditional, low cost Ghanaian dish used in many of the old traditional ceremonies such as coming of age and marriage, it is also used as a spiritual offering.
This is a very rich and creamy dish made from toasted corn powder (Tom Brown) and Palm nut cream and normally is served with crab as a decorative garnish.
Ingredients:
2 cups of toasted corn flour (Tom Brown)
2 large Crabs (soft shell blue crabs are best but I used Dungeness as that's all I could find). The crabs are optional.
1 cup of red beans
Large tin of Palm nut cream
3 Onions
Stock Cube
Dried, smoked fish
2 Skotch bonnet chillies
1 tube of tomato puree
1 tin of chopped tomatoes
Good luck making your Aprapransa, please comment if you have any questions for me.
Thanks for watching!
