Ingredients
2.5 cups pumpkin puree (fresh or tinned)
2 Cups of Refines Flour
2 Tsp Baking Powder
2 Tsp Cinnamon Powder
1/2 Tsp Salt
1.5 Cups Sugar
1 Cup oil
3 Eggs at room temperature
2 drops vanilla essence
1 Tbsp Cream Cheese
2 Tbsps. Whipping Cream
Method
make pumpkin puree by cutting pumpkin into large chunks and boiling by covering a pan. Alternatively you can use tinned pumpkin puree as well. In a bowl, mix all dry ingredients. Now take a separate bowl and add pumpkin puree along with oil and eggs. Mix thoroughly. Now combine the wet and dry ingredients to make a smooth batter. Brush the inside of a cake mold with oil and dust with flour. Now pour the cake batter into this tin. Cook for 25-30 minutes in a preheated oven at 180 degrees Celsius. You must insert a toothpick or knife to check if the cake is cooked.
For frosting, add creamcheese and whipped cream to a bowl along with honey and vanilla essence. Whip and keep it in the fridge. Once the cake has cooled down, pour and spread it over the cake.
