The Grateful Crane Ensemble is excited to announce a new video series called "The Shokudo". In Japan, shokudō (食堂) are casual mom-and-pop hole-in-the-wall restaurants that serve a variety of Japanese dishes. Aspiring chef Jon Kenzo Okeya has built a secret backyard diner that he calls “The Shokudo”. There, we will explore the dishes that we all know and discover more about ourselves by cooking and eating them. This two-part episode explores one of the most important dishes from one of the most important Japanese American holidays, New Year's ozoni. In this first part, we talk with Kent Marume about mochi and the different ways that it can be prepared to be eaten in ozoni.
