This video is created to record my baking journey after graduating from a pastry program. However I am still not a professional yet, I still need to improve and learn a lot, and I am hoping to get more knowledge out there from everyone. And also hopefully my video can be an inspiration or a helpful tutorial video!
Recipe for the puff pastry:
227g cold butter
225g flour
5g salt
135g cold water
Recipe for pistachio almond cream
115g ground nuts (70g pistachio & 40g almond)
8g flour
50g soft butter
50g sugar (I found this is mild sweet for me if you want to make this sweeter, you can raise the amount of sugar to 60g)
1 egg room temperature
1-2 drops of extract (vanilla or rum)
pinch of salt
