Ingredients:
1 Eggplant
1/2 Natural tomatoes from a can 🥫
1 clover of garlic
Grated cheese (I use a mix of mozzarella, red cheddar, and colby)
Coriander and Greek yogurt
Salt and Pepper, Smoked Paprika; olive oil
🍆🥫Method:
Before Cooking:
👉 Cut the eggplant in half (Keep the stem intact and cut through it; it helps hold the eggplant together once roasted and soft).
👉 Cut flesh into 2.5cm corners (cutting down as far as you are comfortable without piercing the flesh).
👉 Sprinkle with salt.
👉 Squeeze like a sponge to remove the excess water, then pat the surface dry.
Preheat the oven to 200C/390F.
👉 Sprinkle eggplant and garlic with salt and olive oil.
👉 Cover each half of the eggplant and garlic with foil.
👉 Roast for about 40-60 minutes or until the eggplant is softened. Sometimes it takes longer.
👉 Place tomatoes in a bowl, add a few pieces of roasted garlic, and with a spoon, remove the flesh from eggplants; with a fork, smash all vegetables together.
👉 Layer the tomatoes mixture, then some spinach, then cheese, and again a layer of the tomatoes mixture.
👉 Roast for 15 minutes more, then add cheese and roast another 15 minutes.
👉 Sprinkle with chopped coriander and serve with Greek yogurt!
