Today’s recipe is one of my absolute favourites — Aubergine (Eggplant) and Chickpeas Curry. It’s comforting, rich in flavour, and made with two humble yet powerful ingredients: aubergines (also known as eggplants) and chickpeas. Perfect for those days when you want something delicious but still home-cooked.

This recipe brings together sautéed aubergines and creamy chickpeas in a spiced onion-tomato-yoghurt base. It's wholesome, satisfying, and incredibly versatile — serve it with cumin rice, chapati, or naan. I’m already getting hungry just thinking about it!

📝 Ingredients:

Aubergines – 1 large cubed

Chickpeas – 400g cooked (or 1 tin)

Red Onion – 1 (finely chopped)

Tomatoes – 2 large (finely chopped)

Green Chillies – 2 small (finely chopped)

Ginger-garlic paste – 1 tsp

Cumin seeds – 1 tsp

Kashmiri Chilli Powder – 1 tsp

Turmeric Powder – ¼ tsp

Coriander Powder – 1 tsp

Cumin Powder – ½ tsp

Yoghurt – 2½ tbsp

Salt – to taste

Cooking Oil – as needed

Fresh coriander – for garnish

👩‍🍳 Method Overview:

Sauté cubed aubergines until soft and slightly charred, then steam briefly with a lid on.

In the same pan, prepare the onion-tomato base with spices.

Add yoghurt gently to the mixture to add depth and creaminess.

Add the aubergines and chickpeas into the masala base, mix and cook covered.

Garnish with coriander and serve hot with your choice of bread or rice!
