COCONUT CANDY
INGREDIENTS:
Freshly grated coconut – 2 (approx. 560 gram)
Sugar – 2 cup / 450gram
Sweetened condensed milk – 1 can / 500gram (I use F&N)
Food coloring – Bright red or any color of your choice.
Ghee – to grease the pan
**1 square pan about 9 X 9 inch
Method:
1. Firstly, grease the square pan and set aside.
2. Then heat a pan at medium flame. Add in grated coconut and fry for 5 minutes, keep on stirring. Fry till the fresh coconut is dry like the desiccated coconut
3. After 5 minutes add in sugar, condensed milk, and food coloring. Stir constantly until sugar dissolves and coconut clumps together, about 20 minutes.
4. Transfer mixture to a prepared container. Level the surface with a spatula. Press down firmly with wax paper or plastic wrap.
5. Cut the candy paste into little square cubes with a well-greased knife immediately. But do not remove it from the pan yet. Allow candy to cool and set overnight.
6. Remove cubes from pan and store in an air-tight jar.
