The addition of red beets not only gives the steaks a stunning color but also adds a subtle sweetness that balances the smoky, savory flavors. Perfect for grilling, pan-searing, or adding to your favorite recipes, these steaks are sure to impress vegans and non-vegans alike.
INGREDIENTS:
Dry Ingredients:
-200g (1½ cups) vital wheat gluten
-1½ tbsp garlic powder
-1 tbsp smoked paprika
-1 tbsp onion powder
Wet Ingredients:
-60g red beets, peeled and diced
-2 tbsp soy sauce
-2 tsp yellow mustard
-2 tsp liquid smoke
-1 tbsp olive oil
-1 tbsp vegan Worcestershire sauce (recipe HERE)
-¼ cup (60ml) vegetable broth
For the Marinade:
-1 tbsp vegetable broth
-2 tsp liquid smoke
-½ tbsp soy sauce
-1 tsp smoked paprika
-1 tsp garlic powder
INSTRUCTIONS:
1.Blend Wet Ingredients First: Add all the wet ingredients (red beets, soy sauce, mustard, liquid smoke, olive oil, vegan Worcestershire sauce, vegetable broth, and onion powder) into a high-power mixer or food processor. Blend until smooth.
2.Add Dry Ingredients: Gradually add the dry ingredients (vital wheat gluten, garlic powder, and smoked paprika) into the mixer. Blend until the mixture forms a dough.
3.Knead the Dough: Transfer the dough to a clean surface and knead for 2 minutes to develop elasticity and a firm texture.
4.Shape the Steaks: Divide the dough into 2–3 portions and shape them into steak-like patties.
5.Cook the Steaks: In a large pot, bring vegetable broth to a simmer. Add 2 bay leaves for extra aroma, if desired.
Simmer gently for 30 minutes. Avoid boiling to prevent a rubbery texture.
6.Marinate: Once the steaks have cooled, mix all the marinade ingredients in a bowl.
Place the steaks and marinade into a reusable silicone bag or an airtight container. Ensure the steaks are fully coated. Seal and refrigerate for at least 30 minutes, or overnight for bolder flavors.
7.Grill or Pan-Sear: Heat a grill or skillet over medium-high heat. Cook the steaks for 2–3 minutes on each side until they develop a nice crust.
