How to Make Boston Baked Beans | Simple DIY Canning Recipe

If you love baked beans, you'll LOVE these! This is a traditional recipe that is easy to tweak for your own personal taste. If you like them sweeter or thicker or tangier, simply adjust the sauce at the 2 hour mark. Add ins that are great to use can be: ketchup, mustard, Worcestershire, bay leaves, maple syrup, more molasses, your favorite bbq sauce or other seasonings.
The basic recipe is here: (feel free to cut in half)
4 pounds dried navy beans
1 pound bacon (or other pork) diced (browned optional)
6 onions
2 cups brown sugar
4 tsp salt
4 tsp dry mustard
2 tsp garlic
2 cups molasses
Soak beans over night in the fridge.
Drain and rinse beans. Then in a large pot, add beans and cover with water.
Bring to a boil, reduce heat and let simmer until bean skins begin to burst. Drain but save all the bean liquid.
Add all ingredients in a large baking dish. Stir well. Add 8 cups of your reserved bean water.
Bake 350 for 3.5hours.
At the 2hour mark, taste your sauce and adjust if necessary.
Add water as needed to be soupy.
Fill hot beans into hot jars. Be sure you have plenty liquid (or add more bean water to the top).
1 inch headspace.
Pressure can for 1 hr 20 minutes for pint jars or 1 hr 35 minutes for quarts at 10pounds pressure.
Makes approximately 14-15 pints or 7 quarts.
