Bakers percentage math about baking
1000 gm flour = 100% ( 2 loaf)
750 gm water = 75%
200 gm starter = 20%
20 gm salt = 2%
Formula #1 with 65% hydration
500 gm flour
325 gm water
100 gm starter
10 gm salt
formula #2 with 75% hydration
500 gm flour
375 gm water
100 gm starter
10 gm salt

Preparing Leaven for 1 bread loaf
Starter : 20 gm
Flour : 60 gm ( whole wheat flour 20 gm + all purpose flour 40 gm )
Warm water : 60 gm
( this will give 140 gm total leaven , out of we will use 100 gm for preparing bread and you can feed remaining starter as usual and store it in the fridge for further use)
For preparing Sourdough with 75% hydration
500 gm flour
375 gm water
100 gm starter
10 gm salt
