Ingredients

¾ tsp. baking soda
¾ cup (1½ sticks; 169 g) unsalted butter, divided
1 cup (200 g) packed dark brown sugar
¼ cup (50 g) granulated sugar
1 large egg
2 large egg yolks
2 tsp. vanilla extract
6 oz. (170 g) bittersweet chocolate (60%–70% cacao), coarsely chopped, or semisweet chocolate chips
Instructions
1. Preheat and Prepare: Place oven racks in the upper and lower thirds of your oven and preheat to 375°F (190°C).
2. Combine Dry Ingredients: Whisk together flour, salt, and baking soda.
3. Brown the Butter: Cook ½ cup (1 stick) of the butter in a tall saucepan over medium-low heat until browned, being careful not to burn it. Transfer to a large heatproof bowl and let cool.
4. Melt Remaining Butter: Add the remaining ¼ cup (½ stick) of butter, cut into small pieces, to the brown butter and stir until melted.
5. Add Sugars: Whisk in both sugars until incorporated.
6. Add Eggs and Vanilla: Whisk in the egg, egg yolks, and vanilla extract until smooth.
7. Combine Wet and Dry Ingredients: Fold the dry ingredients into the wet mixture until no dry spots remain.
8. Fold in Chocolate: Fold in the chopped chocolate or chocolate chips.
9. Hydrate Dough: If the dough is too soft, stir it together and let rest for 5–10 minutes for hydration.
10. Portion Dough: Use a scoop or spoon the dough onto baking sheets.
11. Bake: Bake for 10-12 minutes, or until edges are golden brown and centers are soft.
12. Cool: Let cool on the baking sheet briefly before transferring to a wire rack.
