I tested two variations of my chickpea flour chocolate chip cookies: one with regular eggs + the other with flax eggs (1 tablespoon flaxseed meal + 3 tablespoons water). everything else was the same, including the bake time.
both were delicious, but believe it or not, the texture of the vegan version was fudgier and gooier than the original!
