Instructions:
Soak the raw red lentils for at least 4 hours or overnight in the fridge. Once soaked, drain and rinse them thoroughly.
In a blender, combine the soaked lentils, cottage cheese, eggs, olive oil, and maple syrup. Blend the ingredients until the mixture becomes smooth and silky.
Add baking powder and vanilla extract to the mixture and blend briefly to ensure everything is evenly incorporated.
Transfer the blended mixture into a mixing bowl, allowing it to rest for a minute.
