Ingredients
Tomato/Tamatar - 3 chopped in big pieces
Capsicum/Shimla Mirch - 1 diced
Cumin seeds - 1 Teaspoon
Hing/Asafoetida - a pinch
Salt - as per taste
Turmeric powder - 1/4 Teaspoon
Red Chilli Powder - 1/2 Teaspoon
Coriander Powder - 1/2 Teaspoon
Roasted Cumin powder - 1/2 Teaspoon
Sugar - a pinch (optional)
Ghee/Clarified Butter - 1 Teaspoon
Coriander Leaves - as required
Instructions
Heat ghee/clarified butter in a pan.
Add cumin seeds and asafoetida. Let the seeds crackle.
Then add diced capsicum and saute it on a high flame for couple of minutes. Add little salt while sauteing.
Add chopped tomato, mix well and cook.
Now, add turmeric powder, red chilli powder, coriander powder, salt, roasted cumin powder. Mix well. Cover and cook for a minute.
Add pinch of sugar and mix well. Cover and cook until tomatoes are little soft then switch off the flame. Do not overcook, keep the capsicum little crunchy.
Delicious 'Tamatar Shimla Mirch Sabzi | Tomato Capsicum Sabzi' is ready to be served. Garnish it with coriander leaves and serve hot with roti.
