Pastry cream:
30grams starch
100 grams sugar
pinch of salt
350ml milk
2 eggs
fruit of choice: best are == blueberries, preserved apricots, preserved peaches, strawberries, kiwis, canned clementines/mandarines, raspberries, gooseberries, preserved cherries
Cake base:
Beat 2 eggs whites with 3 tablespoons hot water until stiff peaks form. Slowly beat in 100 grams sugar. Gently beat in the 2 egg yolks. Fold in 100grams sifted flour. Grease a flan pan. Bake at 375 for approximately 15 minutes (until golden).
