Unique Flat Ramen Noodles at Kaneda, next to Tokyo Station

Описание: Kaneda (かね田) has gained quite some notoriety among ramen nerds since its opening in 2022 due to the highly recognizable flat ramen noodles and the super easily accessible location right next to Tokyo station.

The tsukemen with the flat ramen noodles are the main draw of Kaneda, although there is also a regular bowl of ramen on the menu. The soup at Kaneda is made with 5 different kinds of niboshi from the Setouchi inland sea. It is quite niboshi forward, but definitely on the lighter side overall. The noodles are definitely the star of the show, that's what you come here for. The are beautifully flat, quite high hydration and have lovely little specs of wheat worked into the dough. They are also quite slippery, so be warned, you will probably drop one or two on the way into the dipping soup. The chashu and the egg are alright, but really nothing to write home about.

One of the big selling points this ramen shop is its location in the KITTE shopping mall, right next to Tokyo station. Due to being next to Tokyo station, it makes Kaneda super easily accessible to literally everyone living in or traveling to Tokyo. Another big boon is that you have Tomita Menban basically next door in the KITTE ramen street.
My personal opinion is that the KITTE ramen street is much better than the Tokyo Station ramen street. So just walk the few steps over and find some great ramen here.
