How To Make Garlic Confit

Garlic Confit is a great way to enjoy the delicious notes of garlic in your dishes without any of the bitterness or bite. Cooking garlic cloves in olive oil makes them soft and mild, almost sweet.
Ingredients:
Garlic cloves, peeled (as many as you want)
Olive oil
Thyme sprigs
Method:
Place the cloves in a small saucepan.
Add enough olive oil to cover the cloves.
Cover.
Set your burner between medium-low to low.
Let simmer for 25-30 minutes, or until the cloves become lightly brown and soft.
Remove from heat and let rest, covered, for 10 minutes.
Strain the oil and pour into a sterilized glass jar.
Spoon the cloves and thyme into the jar.
Cool completely before refrigerating.
Discard any leftovers after three weeks.
