Shepherd's Pie
INGREDIENTS
Celery
Carrot
Bell Pepper
Garlic
Onion
Olive Oil
Red Bell Pepper
Yellow Bell Pepper
Pink Lentil (Split & de husked brown lentils)
Mung Beans (Green Gram)
Kala Chana (Brown Chickpeas)
Kabuli Chana (Garbanzo Beans)
Salt
Black Pepper
Thyme
Rosemary
All-Purpose Flour
Vegetable Stock
Tomato Purée - 3 tbsp
Green Peas - 1 cup
Potatoes
Mash potato mixture (butter, salt and black pepper)
Cheese
METHOD
Chop onions, carrot, garlic, celery, red and yellow bell pepper. Now take some olive oil in a pan and add the chopped vegetables to it. Add soaked and half boiled pink lentil, mung beans, brown chickpeas and garbanzo beans. Add salt and black pepper to it. Now add thyme and rosemary and some all-purpose flour to it. Now add some vegetable stock and 3 tbsp of tomato purée. Add a cup of green peas to it. In another pan, take slices some olive oil and shallow fry the slices of potatoes. Grease the baking tray and set the layer of the fried potatoes and put the prepared vegetable mixture on the fried potatoes. Add one more layer of the mash potato mixture on top of the vegetables with the help of a piping bag. Grate some cheese on the top. Pre-heat the oven at 190˚ for about 5 mins. Then bake the pie for 15 minutes.
