INCREDIBLE Pumpkin Roll Cake!
Ingredients:
Boiled pumpkin 100g. (or pumpkin puree) + 30g. for decoration,
Eggs 3,
Flour 150g.
Brown sugar 120g.
White sugar 30g.
Baking powder 1/2 tsp, Himalayan salt 1/4 tsp, soda bicarbonate 1/2 tsp,
Cinnamon 1 tsp,
Filling Ingredients:
Butter 100g.
Icing sugar 50g.
Cream cheese 200g.
Let's make it:
Preheat oven at 190 degrees Celsius.
Place the pumpkin into a food processor and make pumpkin puree (or you can buy it).
Sift flour, salt, baking powder, soda, and cinnamon.
Whisk the eggs, add brown and white sugar. Mix well, then add pumpkin puree. Mix all to combine.
Pour the cake mixture into a baking tray (30x40cm) on parchment paper, spread it evenly and bake into a preheated oven 15min. at 190 degrees Celsius.
After 15 min. take it out and place it on a clean towel. Carefully peel off paper and roll it with the towel, starting with the narrow end. Let it cool at room temperature, then cut the roll in pieces (2 cm.)
For FILLING beat butter, cream cheese, and powdered sugar until smooth. Carefully unroll cake. Spread cream cheese mixture over the cake. Place some pumpkin cubes at the end and start roll it. Wrap in plastic wrap and refrigerate at least one hour.
Sprinkle with powdered sugar (optional).
If you like, put some decorations. I used a little of the cheese mixture and small pumpkin cube on top.
