Cooking with Carby: Vietnamese Salad Rolls

Ingredients:

Rolls:
1 lb raw prawns (I used extra large Argentinian prawns)
1 cup julienned carrots
1 cup sliced cucumber
1 bunch fresh mint leaves
½ cup dry roasted peanuts
1 package thin vermicelli noodles
1 package round rice paper (9 inch)

Peanut Dipping Sauce:
¼ cup smooth peanut butter
1 tbsp hoisin
2 tbsp dark soy sauce
2 tsp black Chinese vinegar
1 tsp sesame oil
1 tbsp chili garlic
1 clove garlic

Misc:
1 store bought salad roll to throw at the wall
