This is my mom' s recipe for pig feet with black bean sauce. This is a popular dish in southern China, in areas such as Hoiping and Toisan.

PIG FEET STEW RECIPE
In Cantonese Hoiping (Kaiping) dialect, "heuk" can mean "eat" or "kick", depending on the context it is used. In this case, it's funny because "heuk gek" can mean "eat feet" or "kick feet". Just thought I'd share that with you. (The recipe is below):
3 lbs. pig feet cut up
3 cups water
2 teaspoon salt
2 teaspoons brown or regular sugar
1 teaspoon chicken base
3 cloves garlic
1/2 teaspoon sesame oil
2 teaspoon dark soy sauce
1 teaspoon fermented black beans
3 star anise
Boil the pig feet for 5 minutes to get rid of some of the fat and impurities.
Put pig feet in large pot. Add water and all the ingredients. Cover pot with lid and boil for 1 1/2 hours. Add more water if you want more sauce. Enjoy!
