This is my mom's authentic recipe for pig feet and lotus root. Very delicious because the ginger, garlic and soy sauce is soaked up by the lotus root. This dish is very popular in southern China.

Recipe is below:
PIG FEET AND LOTUS ROOT
2 lbs. pig feet
2 lotus root
6 pieces ginger (6 teaspoons ginger)
6 cloves garlic
2 teaspoons cooking oil
3 to 5 cups water
1 teaspoon salt
1 to 3 teaspoon dark soy sauce
1 teaspoon brown or regular sugar
1 teaspoon chicken base (optional)
In boiling water, preboil the pig feet for 10 to 15 minutes. Rinse in cold water. Cut pig feet into pieces.
Peel and cut lotus root into thick slices. Peel and slice ginger. Peel and cut off ends of 6 cloves of garlic.
Heat 2 teaspoons cooking oil in big pot. Stir fry ginger and garlic for 1 to 2 minutes. Add
pig feet, lotus root and water. Add salt, soy sauce, sugar and chicken base. Cover with a lid. Bring water to a boil and cook for 1 hour. Cook longer for more tender pig feet but add more water as required. Stir ingredients 2 or 3 times during the cooking. Stir one last time before serving. Enjoy!
