第一次做了這個伯爵茶口味的泡芙後,從此就全愛上了!! 濃郁的茶香配上滑順的鮮奶油,加上脆脆的外皮,吃起來一點都不甜膩,讓我忍不住一次嗑2個Cream puff !
填入卡士達醬的泡芙要馬上吃,不然泡芙體會軟掉。
✨保存方式✨
泡芙體:直接裝密封袋後冰冷凍。要吃時,烤箱預熱至160度關火,將泡芙放進烤箱10分鐘後再取出放涼就可填入卡士達醬。
卡士達鮮奶油:冷藏保存3天左右,千萬不能放冷凍!
💟二種不同吃法的口感我都好愛!!
一、馬上吃:泡芙體等涼了之後填入伯爵卡士達醬。
二、凍著吃:填入卡士達醬的泡芙放到冷凍,冰4小時以上。要吃時室溫解凍10分鐘。外皮雖然不是脆脆的,但內餡像是冰淇淋,好適合現在酷熱的夏天。

【Custard Cream 卡士達醬材料】
3 egg yolks 蛋黃
40g sugar 砂糖
18g cornstarch 玉米粉
250g milk 牛奶
2 earl grey teabags 伯爵茶包
100g whipping cream 鮮奶油
8g sugar 砂糖
【Craquelin/Pastry 脆皮材料】
30g Unsalted butter 無鹽奶油
20g Sugar 砂糖
30g Cake flour 低筋麵粉
【Choux/Puff 泡芙材料】
2 egg 雞蛋
30g water 水
30g milk 牛奶
25g unsalted butter 無鹽奶油
1g salt 鹽
35g all purpose flour 中筋麵粉
