低溫慢烤的方法很大程度地保留了牛排的營養成份和水份,所以吃起來特別軟滑多汁,做法也非常簡單好掌握。
紐約牛排一份(厚度1.5寸)
牛排調味:海鹽、黑胡椒、橄欖油
適量
黃油20克
羅勒(或迷迭香)適量
七分熟:(如本食譜所展示)
預熱烤箱170華氏度烤30分鐘,翻面再烤30分鐘,牛排中心溫度120華氏度。
五分熟:
預熱烤箱170華氏度烤30分鐘,翻面再烤20-25分鐘,牛排中心溫度105-110華氏度。
溫馨提示:
1. 本食譜用的是1.5寸的牛排,不同厚度需要適當調節烘烤的時間。
2. 每家的烤箱會有差異,請根據你的烤箱適當調節溫度和時間。
1 New York strip steak ( 1.5 inches in thickness)
Seasoning: sea salt, black pepper, olive oil
Butter 20g
Basil (or rosemary)
Medium well (as shown in this recipe):
Preheat oven 170F, bake 30 mins, turn it over and bake another 30 mins, the center of the steak reach 120F.
Medium:
Preheat oven 170F, bake 30 mins, turn it over and bake another 20-25 mins, the center of the steak reach 105-110F.
Friendly reminder:
1. The steak is 1.5 inches thick as shown in this recipe, if use different thickness, need to adjust bake time.
2. Every oven might be different, adjust temperature and time as you need.
