🍑 Peach Upside-Down Cake
A deliciously soft and fluffy cake you can make with seasonal fruits! 😋
Ingredients:
2–3 peaches, sliced
1 + 3/4 cups granulated sugar (3/4 cup is used for the caramel)
1/2 cup brown sugar
1/2 cup vegetable oil
1/2 cup unsalted butter, melted
2 large eggs (or 3 if small)
3/4 cup buttermilk (you can make your own by adding lemon juice to milk and letting it sit, or use thick yogurt drink/ayran)
5 g vanillin powder (or 1 tsp vanilla extract)
2 cups all-purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
Instructions:
1. Preheat the oven to 180°C (350°F). Grease your cake pan and layer the bottom with the sliced peaches.
2. In a medium saucepan over medium-high heat, combine 3/4 cup of sugar with 2 tablespoons of water. Cook, swirling the pan if needed (do not stir), until it turns into a golden caramel, about 6 minutes. Immediately pour the caramel over the peaches.
3. In a large mixing bowl, whisk the remaining 1 cup sugar, brown sugar, oil, melted butter, and eggs until smooth. Add the buttermilk and whisk to combine, then mix in the vanilla.
4. In a separate bowl, combine the flour, baking powder, and baking soda. Gradually add the dry mixture into the wet ingredients and mix until just combined.
5. Pour the batter over the caramel-covered peaches. Bake for 40–45 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
6. Let the cake cool for 15 minutes. Then place a plate on top of the pan and invert the cake onto the plate.
