Ingredients for Paneer Do Pyaza:
(Tsp-Teaspoon; Tbsp-Tablespoon)
Paneer - 250 gms
For the Tempering:
Cumin seeds- 1 tsp
Green Cardamom-3
Cloves-3
Cinnamon- 1
Spice Powders:
Turmeric powder- 1/2 tsp
Red Chilli powder - 2 tsp
Coriander powder - 2 tsp
Garam Masala powder - 3/4 tsp
Kasuri Methi (roasted and crushed)- 1 tsp
Other Ingredients:
Onions, grated - 2 small (120 gms)
Onion petals- 2 small (120 gms)
Green chillies, slit- 3
Ginger garlic paste- 2 tsp
Tomato purée, readymade- 5 tbsp
Cashew paste- 12 nos
Oil - 3 tbsp + 1.5 tbsp for sautéing
Salt - 1 tsp or to taste
Coriander leaves, chopped - 1 tbsp
Preparation:
Grate onions & make petals of the balance 2 small onions.
Use readymade tomato purée or alternatively blend/purée 2 small red tomatoes.
Make a paste of 12 cashewnuts.
To make cashew paste, add all the cashew nuts in a grinder/blender and grind into a powder. Now add 3 tbsp water and blend again into a smooth paste.
Lightly sauté the onion petals. Remove & set aside for use later.
Cut the paneer into square cubes (around 14-15 pieces) & lightly pan fry both sides. Remove & set aside.
Process:
Heat oil in a pan or kadhai and add the whole cumin seeds and the garam masalas.
Once it splutters, add the ginger garlic paste & fry for around 2 mins on low heat till raw smell is gone.
Now add the grated onions, give a mix and fry on medium heat for 7 mins till colour changes.
Add the readymade tomato purée, 2-3 tbsps of water and mix & fry for around 2 mins on medium flame till oil separates. (In case you’re using fresh tomato paste fry for 3-4 mins till oil separates)
Now add in all the spice powders, 1/2 tsp Garam Masala powder and 1 tsp salt. Fry the masala for around 3 mins after adding 2-3 tbsp water till oil separates.
Once the oil separates, add the cashew-paste and the slit green chillies, give a mix and fry on low heat for 3-4 mins till oil separates.
Now add in the pan-fried paneer pieces and the sautéed onion petals Mix well & add 150 ml water.
Give a mix and cover & cook for around 5 mins.
Now remove cover & add in 1/4 tsp garam masala powder and roasted & crushed Kasuri Methi. Mix in & simmer for 2 mins
Garnish with 1 tbsp chopped coriander leaves.
