Beijing Mutton Stir Fry:
For marination:
Mutton Boneless Strips - ½ kg
Baking Soda - 1 tsp
Salt - 1 tsp
Pepper - ½ tsp
Soy Sauce - ½ tsp
Corn Flour - ½ Cup
Oil - For Frying + 4 tbsp
Egg - 1 no
For The Sauce:
Oyster Sauce - 2 tbsp
Tomato Ketchup - 2 tbsp
Soy Sauce - 1 tsp
Vinegar - 1 tsp
Salt - ½ tsp
Honey - 1 ½ tsp
For The Stir Fry:
Garlic (Finely Chopped) - 1 ½ tbsp
Capsicum (Cubes) - 1 no
Onion(diced) - 1 no
Coriander Leaves (finely chopped) - For Garnish
White Sesame Seeds - For Garnish
Instructions:
1. In a mixing bowl add all the ingredients for the marination and mix completely
2. Let the mutton sit for 30 minutes (this ensures the mutton becomes tender)
3. In a smaller mixing bowl combine all the ingredients for the sauce and set aside
4. Deep fry the marinated mutton until golden brown and crispy and set aside
5. In a wok or kadhai, pour oil and add the diced onion, capsicum and garlic
6. Saute for 10 seconds or until soft and aromatic and add the sauce
7. Cook the sauce for 30 seconds on a high heat
8. And add the mutton and toss
9. Garnish with sesame seeds and spring onion greens
