✓5 cups all-purpose flour, 625g
✓1 tablespoon salt, 17.07g
✓1/4 oz. instant dry yeast, 7g
✓1/4 cup sugar, 50g
✓6 large eggs
✓1 1/4 cups unsalted cold butter, 280g
✓1 egg yolk + 1 tablespoon milk
*brioche molds ( 3.5in/8.89cm)
