Recipe
Levain:
-15 grams mature starter
-100 grams all purpose flour
-100 grams water (80-85F)
Final dough:
-160 grams Levain
-400 grams all purpose flour
-40 grams whole wheat flour
-350 grams water (90-95F)
-35 grams extra virgin olive oil
-10 grams Kosher salt
