These Gluten Free Pop Tarts come from the Gluten Free and More Website. The recipe uses Bob’s Red Mill 1 to 1 gluten free flour blend. I used frozen strawberries to make the filling but the link below to the full recipe gives other options as well. The recipe was pretty easy to put together and the taste was really good. We ate them all over the course of a couple days but they freeze well too. This recipe is DEFINITELY a keeper.

Ingredients
For the filling:
1½ Cups (220 G) Frozen Strawberries
3 Tbs (37.5 G) White Sugar
1 Tbs. (15 ml) Lemon Juice
1 Tbs. (8 G) Gluten-Free All-Purpose Flour With Xanthan Gum
¼ tsp. (0.7 G) Ground Cinnamon
3 Tbs.(45 ml) Water
For The Pastry:
⅓ Cup (80 ml) Unsalted Butter
¼ Cup (50 G) White Sugar
2 Large Eggs
1 Cup (120 G) Gluten-Free All-Purpose Flour With Xanthan Gum (I Used Bob's Red Mill 1 To 1 Baking Flour)
1 tsp. (4 G) Baking Powder
½ tsp. (1.5 G) Xanthan Gum
½ tsp. (3 G) Kosher Or Fine Sea Salt
2 tsp. (10 ml) Water
For The Icing:
½ Cup (62 G) Powdered Sugar
2 Tbs. (30 ml) Milk, Dairy-Free Milk, Or Water
