Maskouta (Moroccan yoghurt & orange cake)
Wet Ingredients
3 medium eggs
200 g sugar
140g vegetable oil
120 ml fresh orange juice
110g plain yogurt
Zest of 1 & 1/2 oranges
1 tsp vanilla extract
1 tbsp apricot jam (optional)
Dry Ingredients
240 g plain flour
2 tsp baking powder
Pinch of salt
I baked the cake for 45 mins at 170c in an 8 inch Bundt tin. You can use a loaf tin or any other tin you prefer.
