How to Make Banana Pudding From Scratch! Magnolia Style + Easy Nilla Wafers Recipe

BANANA PUDDING (UK-Friendly | Magnolia Style)
Today I'm showing you how I made creamy, delicious banana pudding, including homemade “Nilla” wafers since we can’t get them easily in the UK. This whole dessert is simple, and tastes just like the classic Magnolia Bakery version.
🍪 Homemade Nilla Wafers
113 g unsalted butter
133 g granulated sugar
1 large egg
1 tbsp vanilla extract
190 g self-raising flour
Pinch of salt
1 tbsp milk (plus more if mixture is too thick)
Method:
1. Preheat oven to 170°C and line a baking tray with parchment paper.
2. Beat butter and sugar until creamy.
3. Add the egg and vanilla; mix until combined.
4. Whisk flour in the bowl.
5. Add the milk. Keep mixing with spatula.
6. Pipe or scoop 2 teaspoon-sized cookies onto the tray.
7. Bake for 8 minutes, or until the edges are lightly golden.
If you can’t be bothered to make the Nilla wafers, you can use ladyfingers or vanilla sponge cake instead.
🍌 Banana Pudding (Magnolia Style)
Ingredients:
1 can (397 g) sweetened condensed milk
355 ml cold water
1 packet instant vanilla pudding mix
600 ml double cream
4–5 ripe bananas
Homemade wafers (or alternatives)
Method:
1. Whisk condensed milk with cold water until smooth.
2. Add pudding mix and beat for 2 minutes.
3. Cover and chill for 4 hours or overnight.
4. Whip double cream to stiff peaks.
5. Fold the cream into the chilled pudding until fluffy.
6. Layer wafers → bananas → pudding.Repeat three times.
7. Top with extra wafers or crumbs.
No Instant Pudding in the UK? Use Custard Instead!
Try online but if you can't find instant vanilla pudding mix, this custard method works beautifully and gives you a very similar Magnolia style texture.
Ingredients:
500g ready made custard (I use carton custard)
2 tsp cornflour
1 tbsp vanilla extract or vanilla bean paste
Method:
1. Heat custard in a saucepan on low heat
2. Mix the cornflour in a separate bowl with a little cold custard or milk to make a slurry.
3. Stir it back into the pan.
4. Cook on medium until thick and smooth.
5. Add vanilla and let it cool completely. Pop int fridge when cool.
6. Fold into 600 ml whipped double cream just like the original recipe.
Tip: The custard must be fully cold before folding into the cream.
Serving Tips
Chill for at least 4 hours before serving.
Even better the next day.
