Vietnamese Caramel Trout

Hi guys, Welcome to Marks Home Kitchen where I cook family friendly meals everyone can enjoy. Todays video is for a sweet and spicy Vietnamese Trout Dish. This dish hits all the flavour umami with its sweet, spicy sauce which has just a little kick but the sweetness is complimented by a squeeze of lemon juice just before serving
SERVES 2
50g golden caster sugar
1 tbsp Thai fish sauce
red chili, finely sliced
large piece of ginger, peeled
and finely sliced
2 rainbow trout filets
2 heads Bok Choi, halved
1/2 lemon, juiced
coriander and steamed rice, to serve
Put the sugar in a large, shallow pan with a small splash of
water.
Heat gently, swirling the pan until the sugar has dissolved.
Turn up the heat and bubble the syrup until it turns a dark amber colour.
Add the fish sauce, most of the chili and ginger, and 1 tbsp water to dilute.
Return to the boil and cook until syrupy, then add the fish fillets, skin-side down, and the Bok Choi, cut-side down.
Cover the pan with a lid and simmer for 4-5 mins until the fish is cooked and the Bok Choi has wilted.
Turn off the heat, squeeze over the lemon and scatter with the remaining chilli and ginger.
Serve with the steamed rice.
