Hi everyone and welcome to Marks Irish Kitchen, where I do recipes that the whole family can enjoy. Todays recipe is for Prawns with Lemon Quinoa. This is my version of the healthy Prawn dish with Quinoa and mixed beans, capers and lemon juice. it is a favourite with the whole family because prawns and lemon quinoa are so well matched.

Ingredients
100g uncooked quinoa
200mls chicken or vegetable stock
450g (1lb) prawns or shrimp, shelled
400g tin mixed beans rinsed
2 tablespoons caper
1/2 teaspoon smoked paprika (plain paprika works just as well)
2 tablespoons unsalted butter
Juice of 1 lemon
3 tablespoons olive oil
2 tablespoons fresh parsley
Method
Cook the Quinoa as per the packet instructions and keep warm. In a hot pan add the Prawns and Paprika and cook for 3-4 minutes until cooked through. Transfer to a warm plate and set aside. Put the butter and olive oil in the pan and add the beans, capers and lemon juice and cook for 2 minutes until warmed through. Add the Quinoa and parsley to the beans and stir to mix through.
Season and serve the Quinoa topped with the Paprika Prawns.
