🧂 Ingredients (Serves 3–4)
For Cooking the Attumkal:
Goat leg pieces (Attumkal) – 500 g (2 legs, cut and cleaned)
Turmeric powder – ¼ tsp
Salt – 1 tsp (adjust to taste)
Water – 4 cups
For Tempering / Masala:
Coconut oil – 2 tbsp
Shallots (small onions) – 10 nos, crushed
Ginger – 1 tbsp, crushed
Garlic – 1 tbsp, crushed
Green chilies – 2 nos, slit
Curry leaves – 1 sprig
Coriander powder – 1 tsp
Black pepper powder – 1 tsp (adjust spice level)
Garam masala – ½ tsp
Salt – as needed
Fresh coriander leaves – 1 tbsp, chopped (for garnish)

🔥 Preparation Steps
Step 1 – Clean & Pressure Cook the Goat Leg
1. Wash the goat leg (attumkal) thoroughly.
2. Add to a pressure cooker with turmeric powder, 1 tsp salt, and 4 cups water.
3. Cook for 6–8 whistles on medium flame or until the meat becomes tender and stock turns flavorful.
4. Once pressure releases naturally, keep both stock and leg pieces aside.

Step 2 – Prepare the Masala Base
1. Heat 2 tbsp coconut oil in a pan or clay pot.
2. Add crushed shallots, ginger, garlic, green chilies, and curry leaves.
3. Sauté on medium flame until onions turn golden brown and aromatic.

Step 3 – Add Spices & Combine
1. Lower the flame and add coriander powder, pepper powder, and garam masala.
2. Sauté gently for 15–20 seconds so the raw smell goes away.
3. Pour the cooked leg pieces and stock into this masala mixture.
4. Mix well and let it boil on low flame for 10–15 minutes, allowing the flavors to combine.
5. Adjust salt and pepper if needed.

1. Turn off the flame and sprinkle fresh coriander leaves and a pinch of pepper.
