Bim’s Sourdough Savory Scones 🫖
Bim’s Recipe.
Dry ingredients
1000 g. AP flour
30 g. Baking powder
200 g. Butter
100 g. Lard, if you don’t eat lard just use more butter instead
Wet ingredients
400 g. Sourdough starter
250 g. Sugar
490 g. Parmesan cheese
400 g. Chopped Bacon and chopped ham (cooked them in the pan first before adding)
15 g. Salt
5 eggs
Mix AP flour and baking powder and sift together and cold butter and lard using cold finger tips to mix ingredients together until get crumbly (do not over mix)
In another large bowl mix all wet ingredients together and pure the dry ingredients in then gently mix wet and dry ingredients together using flipping technique do not squeeze or over mix the dough, spread it in to square with your hands and use bench scraper cut in half and put on top of each other then roll it out and repeat the same thing for one more time, then use the rolling pin to roll them out about 1 inches, using scones cutting dipped in flour and cut into the dough do not turn the cut around. Put on the tray with parchment paper then brush with egg wash (egg yolk and drop of milk) then bake in preheated oven at 200 degrees Celsius or 392 degrees Fahrenheit for 15 minutes or until golden brown.
