Full video of sourdough for beginners
This is 65% hydration
Recipe of my bread for each loaf (the students make 3 loaves in the video)
500 g. Bread flour
325 g. Water
100 g. Active starter
10 g. Salt
Mixed the dough and slap and fold until the dough get smooth rest 15 minutes then slap and fold 10 times then rest for 30 minutes then Follow with 4 times stretch and fold every 30 minutes, it takes 2 hours and leave the dough to proof for another 4 at 25 degrees Celsius. After the dough rise 80% then pre shape the dough and rest for 30 minutes then final shape, putting in the Banneton basket bench rest 2 hour.
If you want to cold retard you can put in the fridge for 12 hours
Baking
Preheat oven at 250 degrees Celsius for 30 minutes with cookie sheet and old water tray
Score and open bake at 250 degrees Celsius or 482 degrees Fahrenheit bake for 30 minutes, remove the water tray and continue baking at 220 degrees Celsius or 428 degree Fahrenheit for another 30 minutes to make them crispy skin
