Carrot pickle
Carrot pickle or gajar ka achar ,
Tangy, and spicy instant making pickle.
It requires no prolonged cooking, just mixing ingredients and allowing the flavors to meld over a few days.
Ingredients
Carrots: 1 1kg
fresh, washed carrots, cut into 2to 21/2 inch sticks
Mustard oil: 3–4 tbsp heated and cooled for mixing plus more if needed
Mustard seeds (Rai): 2 tbsp, coarsely ground.
Black pepper powder:2tsp
Turmeric powder (Haldi): 1 tsp
Red chili powder: 2tbsp (adjust to taste)
Salt: as per taste
Instructions
1. Prepare the Carrots: Weash the carrots thoroughly and wipe them completely .
2. Peel and cut them into uniform sticks.
3. In large pan or kadahi,put water and bring it to boil.
4. Add carrots and boil them for 2 minutes (not more than that)
5. Drain water from the carrots
6. Spread the carrot pieces on a dry cotton cloth and keep it in the sun for at least 3-4 hours
7. Ensure they are completely dry before proceeding.
8. Any moisture will cause the pickle to spoil quickly.
9. Heat the Oil: Heat the mustard oil in a small pan until it reaches its smoking point (it will turn slightly smoky). This removes the raw, pungent taste of the oil. Turn off the heat and let the oil cool .
10. Pickle Preparation:In a large, dry bowl, combine the dried carrot sticks with the ground spices, turmeric powder, black pepper powder,red chili powder, and salt. Mix well to coat the carrots evenly.
Pour the warm oil over the carrot-spice mixture and mix everything thoroughly.
Transfer the mixture into a clean, dry, airtight glass jar. Give it sunlight for about two -three days Store it at room temperature for 2–3 days . Shake the jar once daily to ensure the oil coats all the carrots.
The pickle is ready to eat after a few days. Store it in the refrigerator to make it last longer (up to several months if stored properly).
Use a clean, dry spoon when serving to maintain hygiene and prevent spoilage.
