Tasty Teriyaki Salmon with Udon Noodles
Serves 4 Prep & cooking 20 mins
2 x 200g pkts Coles Asia Udon Noodles
4 Coles Tasmanian Salmon Skin On Portions, skin removed, coarsely chopped
150g pkt teriyaki & sesame stir-fry sauce
350g pkt Coles Australian Superfood Vegetable Mix
2 spring onions, thinly sliced
1. Cook the noodles following packet directions. Drain. Place the salmon in a large bowl with the infusion paste from the stir-fry sauce packet. Toss to combine.
2. Heat a wok or large non-stick frying pan over high heat. Stir-fry the salmon, in 2 batches, for 3-4 mins or until cooked. Return the salmon to the wok or pan with the vegetables and the finishing sauce from the sauce packet. Stir-fry for 1 min or until the vegetables are tender.
3. Add the noodles to the wok or pan and stir-fry for 1 min or until well combined and heated through. Sprinkle with spring onion to serve.
