Christmas Cookie Box 2022

Описание: Christmas Cookie Box is always an excellent idea for a present for your family or friends. Just imagine a box full of delicious and different kinds of cookies!
For this Christmas Cookie Box I used one piece of dough, then divided it into two halves and made one white and one dark, then I set my creativity free to make 6 different types of cookies.

1. Raisins and Chocolate Chips
2. Lime and Cardamom
3. Lemon and Ginger
4. Almond and White Chocolate
5. Orange and Dark Chocolate
6. Strawberries and Dark Chocolate

Ingredients:

Cookie dough:

butter 200g. (take it out of the fridge just 10 minutes before use)
sugar 125g.
a pinch of salt
all-purpose flour 285g.
cocoa powder 15g.
3 egg yolks (medium size)

Optional:
*if you want to add different flavors, use the following ingredients, otherwise, you can just keep the cookies in 2 flavors: plain and cocoa

Plain (White) Cookies

1. Raisins and Chocolate Chips
raisins 2 teaspoons
chocolate chips 2 teaspoons
2. Lime and Cardamom
cardamom powder half teaspoon
zest of 1 lime
3. Lemon and Ginger
ginger powder 1 teaspoon
candied lemon (or zest of 1 lemon) 4 teaspoons

Cocoa (Dark) Cookies

4. Almond and White Chocolate
a handful of chopped almonds
melted chocolate about 50g
5. Orange and Dark Chocolate
candied orange 4 teaspoons
melted dark chocolate 50g.
6. Strawberries and Dark Chocolate
melted dark chocolate 50g.
dried strawberries 2 teaspoons

Instructions:

1. In a stand mixer or large bowl, mix the butter with sugar, and a pinch of salt. Take the butter out of the fridge just 10 minutes before use. Mix all the ingredients until well combined, for a few minutes. Don't overmix.
2. Add the egg yolks and combine.
3. Gradually, add the flour and mix until you get a nonsticky dough. Again, don't overmix!
4. Divide the dough into two equal parts. And add combine the cocoa powder with one of the parts. Knead until combined and wrap with plastic film then let rest in the fridge for 2 hours.
5. Divide each dough into 3 parts.
6. Combine the flavors with each dough. Don't over-knead.
7. Once the doughs are ready, roll them out and create different shapes (use your imagination and the tools you have at home). The perfect thickness of the dough is about 5mm.
8. Bake the cookies in the preheated oven at 175°C for 10 minutes. IMPORTANT: Don't move the cookies from the parchment paper until they are completely cool.
9. Once ready, choose to cover some of the cookies with melted dark chocolate and some with white chocolate.
10. Use the flavors of the different types of cookies and let to cool down completely, preferably in the fridge.
