These gooey chocolate brownies have a shiny crackly top and a soft molten center.
Simple ingredients, baked low for the perfect fudgy texture.
The “Gooey Center” Brownie (8-inch pan)
Ingredients (grams)
170 g unsalted butter
200 g dark chocolate (50–60% cocoa)
200 g white sugar
50 g brown sugar
2 large eggs (room temperature)
1 tsp vanilla
70 g all-purpose flour
25 g cocoa powder
½ tsp salt
Method
Melt butter + chocolate (low heat or microwave).
Whisk in sugars while warm.
Add eggs & vanilla, whisk until glossy.
Sift in flour, cocoa, salt.
Fold gently (do NOT overmix).
Pour into lined 8-inch pan.
Bake at 170°C / 340°F for 18–22 min.
Internal Temperature 172°C
Center must still wobble.
Let cool 20–30 minutes only, cut while warm.
