Juustoleipä (hoo-stah-lee-pa), or “bread cheese” is a cheese originally from Finland. Carr Valley Cheese in Wisconsin makes their own version of it and simply calls it Bread Cheese. But there’s no bread in bread cheese! Its name comes from its slightly charred crust that looks like bread. Traditionally it’s made with reindeer milk!! But this American version is made with cow milk. Carr Valley Cheese takes fresh cheese curds (squeaky cheese) and presses them into bread-sized blocks. Then the blocks are baked in special ovens that caramelize the sugars on the outside of the cheese which gives it the toasted-bread look. You can eat it cold or warm, but most people prefer it warm, because the texture turns from squeaky to silky and smooth - but it won’t melt! It’s similar to Halloumi in that way. Some people say the texture is almost like French toast. Also… traditionally, juustoleipa is paired with a cup of hot coffee. Breakfast cheese!! People freakin DIP their cheese into the coffee!! It’s the hottest thing from Finland since the sauna!
