Epoisses de Bourgogne is a washed-rind French cheese classic, from the Burgundy region. It's made with cow's milk, pasteurized, aged 1-2 months with flavor like "a custardy bacon bomb!" It nearly went extinct in the World Wars, but was reborn in the 1950s by the beloved M. Berthaut, and now the Epoisses de Bourgogne is one of the most loved cheeses in the world!
Pairing Suggestions: All you need to enjoy this lil stinker is a crusty baguette and start dunking! Drink a glass of crispy white wine to cut through all the buttery-fat of the cheese, and you'll be in heaven. To go with the terroir-driven pairing principle, choose a white wine from Burgundy, where the cheese originates!! Perfection. You could also try it with a Chardonnay: the crisp and minerally wine goes great with the funky flavors. Or a Pinot Noir: the light fruity flavors will perfectly balance the full, fatty, barn notes in Epoisses.
If you can't find this cheese: Look for a washed-rind cheese. Washed-rind literally means that the cheese is cured in a solution of saltwater brine or other mold-bearing agents (which may include beer, wine, brandy and spices!) Epoisses is washed in brine and brandy. An easy way to find a washed rind cheese is looking for anything with a reddish-orange rind!
