Описание: Today I am sharing 4 dinner recipes that are helping me on my weight loss journey! I am making sour cream chicken enchiladas, tuna cakes with rice pilaf, Mediterranean two ingredient dough flatbreads, and bacons & spinach chicken gnocchi!

Chicken enchiladas 4 pts per enchilada
234 calories, 9g fat, 17g carbs, 25g protein

10 low carb tortillas
1 1/2 lbs chicken breast
1 cup reduced fat Mexican blend cheese
1/2 cups rf mozzarella cheese
1 1/2 tbsp butter
1 tbsp corn starch
2 cups chicken broth
Garlic
1/2 cup light sour cream
1/2 cup blender cottage cheese
Minced onion
Garlic powder
Onion powder
Cumin or taco seasoning
Diced jalapeño

Tuna cakes 2 pts each (makes 4)
175 calories, 6g fat, 7g carbs, 23g protein

3 cans of tuna in water, strained
2 eggs
1/2 cup panko breadcrumbs
2 tbsp diced chives
2 tbsp grated Parmesan
2 tbsp light mayo
1 tbsp mustard (I used spicy brown)
Salt & pepper

Rice pilaf 6 pts per serving (makes 4)
217 calories, 3g fat, 35g carbs, 3g protein

1 cup uncooked jasmine rice
1 tbsp olive oil
Diced jalapeño
Diced onion
Garlic
Salt & pepper

Mediterranean flatbread 10 points
467 calories, 14g fat, 37g carbs, 50g protein

Crust for two flatbreads:
1 1/3 cup whole wheat flour
1 cup plain nonfat Greek yogurt
1 tsp baking powder
Salt & pepper
Seasoning

2 tbsp hummus
Roasted red peppers
Artichoke hearts
1/4 cup reduced fat feta cheese
Blackened chicken

Bacon spinach gnocchi 9 pts (makes 3 servings)
335 calories, 6g fat, 46g carbs, 22g protein

5 slices center cut bacon
3 cups (17 oz package) gnocchi (I used chickpea gnocchi)
1/2 cup fat free fairlife milk
1/2 cup chicken broth
3 garlic and herb laughing cow wedges
2 cups spinach
Garlic
2 diced jalapeños
1 oz light mozzarella cheese
Salt & pepper
